Simple + Frothy grapefruit cocktail
Summer is almost over! But I wanted to share this recipe I created on the fly when I had a plethora of Grapefruits and was craving a tequila drink. This recipe was inspired by the Clayton’s Margarita from Defined Dish.
Frothy Grapefruit Cocktail
This recipe makes 4
1 cup tequila (I love Casamigos or Espolon Tequila Blanco)
3-4 tablespoons local honey (depending on how sweet you want it, could also use simple syrup or spicy honey if you’re feeling well… spicy)
juice of 2 large grapefruits
one pasture raised preferably local egg white (if you want less froth do 1/2 egg white)* I have read that you can use aquafaba (chickpea water) for a vegan replacement to egg white. Haven’t tried it myself but throwing it out there!
NOW BLEND IN BLENDER and top with…
dash of bitters
flaky maldon sea salt (or spicy Mexican salt if you have it!)
garnish with grapefruit
