Simple + Frothy grapefruit cocktail


Summer is almost over! But I wanted to share this recipe I created on the fly when I had a plethora of Grapefruits and was craving a tequila drink. This recipe was inspired by the Clayton’s Margarita from Defined Dish.

Frothy Grapefruit Cocktail

This recipe makes 4

  • 1 cup tequila (I love Casamigos or Espolon Tequila Blanco)

  • 3-4 tablespoons local honey (depending on how sweet you want it, could also use simple syrup or spicy honey if you’re feeling well… spicy)

  • juice of 2 large grapefruits

  • one pasture raised preferably local egg white (if you want less froth do 1/2 egg white)* I have read that you can use aquafaba (chickpea water) for a vegan replacement to egg white. Haven’t tried it myself but throwing it out there!

    NOW BLEND IN BLENDER and top with…

  • dash of bitters

  • flaky maldon sea salt (or spicy Mexican salt if you have it!)

  • garnish with grapefruit
